Ingredients

  • 4 large yellow summer squash
  • 1 stick celery chopped
  • 1 large sweet onion chopped
  • 1 large green, red or yellow pepper
  • 1 large egg
  • 2 cups oatmeal or optional bread or cracker crumbs
  • 1 cup shredded cheddar cheese
  • 1/2 cup mayonaze

How To Make summer squash cassarole

  • Step 1
    Slice 4 large yellow summer squash, chop onion, celery and pepper. Lemon juice for seasoning or salt and pepper,
  • Step 2
    boil in water on stove until slightly cooked, drain and press out water in strainer
  • Step 3
    Place cooked vegetables in a large bowl, mix in oatmeal, mayo, egg
  • Step 4
    Preheat oven to 350o Oil a pyrex dish square or rectangular. Spoon in mixture, top with cheddar cheese. Optional layering cheese through the dish and on top. Place toothpicks in top to hold up Cover of aluminum foil. bake at 350o for 45 minutes.
