Ingredients
- 3 large yellow squash
- 2 cups hungry jack complete pancake mix
- 2 eggs
- Salt dash salt
- dash pepper
- 1/4 cup milk
How To Make summer fried squash

Step 1In a bowl mix together the eggs, milk, salt and pepper. Place the pancake mix in a quart size ziplock bag.

Step 2Wash the squash. Slice in circles Dip the squash in the egg mixture

Step 3Now place the squash in the pancake mix and shake well till coated. I just dip once. But you can dip in the egg mixture and then again in the pancake mix.

Step 4In a skillet or a deep fryer heat oil. Now drop the squash in the hot oil and fry 2-3 minutes till slightly browned. Drain on a paper towel. Then enjoy.!!
