Ingredients

  • 4 - zucchini
  • 1 cup diced onion
  • 1/2 cup diced carrot
  • 1/2 cup diced red pepper or any pepper
  • 1 cup diced muchrooms
  • 1 - minced garlic clove
  • 1 can tomato sauce
  • 1/2 cup mozzerella cheese
  • 1 cup bread crumbs

How To Make stuffed zucchini

  • Step 1
    Heat oven to 350 degrees. Slice zucchini lengthwise and scoop out seeds.
  • Step 2
    Place zucchini seeds and flesh in a bowl with garlic,onion,carrot,redpepper,muchroom,bread crumbs .
  • Step 3
    Stuff zucchini shells with the mixture and put them on a greased baking pan.
  • Step 4
    Pour tomato sauce over zucchini and cover pan with foil. Bake 45 minutes till soft. Sprinkle with mozzerela cheese and bake till cheese is melted.
