I have been working on this recipe for a wile.Found it first in a dutch oven cook book. But something just did not work.That is untill I steamed them first.

Ingredients
- 4 medium onions, vidalia, peeled
- 3/4 cup cottage cheese, lowfat,small curd
- 2 tablespoons diced green bell pepper
- 1 teaspoon salt
- 2 tablespoons butter
- 1/2 cup cheddar cheese, shredded
- 1 slice bacon
- 1/2 teaspoon garlic powder
- 1/2 cup bread crumbs, seasoned
- 1 cup dark beer
- 1 cup water
How To Make stuffed vidalian onions

Step 1Using a bambo steamer. Steam your onions with a mix of dark beer and water till they are tender.Abought 20 to 30 min. Wile onions are steaming. In a 4qt cast iron dutch oven. Fry bacon till crisp. Crumble in a mixing bowl. Add cheese, garlic, peppers a dash of salt. I also add a little hot sauce to the mix.

Step 2Remove onions from steamer and let cool.. Carfully remove the centers from the onions, chop the centers fine and add to the stuffing mix. Take a peace of kitchen twine and losely tie the onions

Step 3Stuff centers of the onions and place in the dutch oven..In a small mixing bowl mix bread crumbs with melted butter. Top each onion with bread crunbs,cover and.Bake in the oven for 30 min.at 350. If backing in the fire you will nee 10 coals on the bottom and 14 to 16 on the top lid.
