Sometimes I will add a can of diced tomatoes, drained, with the tomato sauce. You can also add crumbled feta during the last several minutes of cooking.

    fresh string beans
  • 1
    onion, chopped
  • 2
    potatoes, peeled and quartered
  • 2
    carrots, peeled and sliced
  • 1/4 c
    chopped celery
  • 3/4 c
    olive or canola oil
  • 1(8 oz) can(s)
    tomato sauce
  • 1 c
  • 2 tsp
  • Dash
  • ·
    chopped parsley & mint

How to Make String Beans & Tomato Sauce


  1. Sauté onions lightly in oil.
  2. Add tomato sauce, salt & pepper and simmer for 15 minutes.
  3. Add string beans and remaining ingredients. Cover and cook slowly for 1 hour or until tender.
