I was introduced to street corn at an office bbq once and have been making it for get togethers since then. It is a simple side dish that will add flavor and color to any taco night or summer bbq. The flavors are mild unless you decide to use a hotter variety of paprika or chili powder. Cotija has a consistency and flavor similar to parmesan. Plus you can adjust this easily to your party size.

Ingredients
- 6 ears - corn on the cob
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 4 ounces cotija cheese-grated
- - paprika
- - chili powder
How To Make street corn

Step 1Shuck and silk (if fresh) corn.

Step 2Grill until tender. alternatively - broil or use stovetop griddle

Step 3Mix mayonnaise and sour cream together; coat each each of corn

Step 4Roll coated ears in cotija cheese

Step 5Sprinkle liberally with paprika and chili powder.

Step 6Wrap individually in foil until ready to serve.
