steamed summer squash and zucchini
This simple, delicious, and healthy recipe for summer squash and zucchini will have you eating your vegetables every day. I was too tired to cook one day and went through the fridge and saw a yellow squash and a zucchini. I didn't want to fry, bake, or even chop them, but they needed to be cooked and eaten that day. I thought, "Just toss them in the microwave and eat them. It'll be fine." Well, they turned out to be better than fine. We have them at least once a week. My son wants them every day, but I don't have room in the fridge to keep that many. I hope you enjoy them as much as we do.

Ingredients
- 1 medium yellow crooked neck squash
- 1 medium zucchini
- 2 teaspoons extra virgin olive oil
- 1 teaspoon Mrs. Dash or any salt free mix
- 2 teaspoons Caesar dressing
How To Make steamed summer squash and zucchini

Step 1Wash, rinse, and dry a medium-sized yellow summer squash and/or a medium zucchini.

Step 2Cut off the ends of both. Then slice them lengthwise. We use half of both vegetables as a full light meal or snack.

Step 3Place half of each vegetable on a microwave-safe plate, cut sides up.

Step 4Score the vegetables on a diagonal with a sharp knife, being careful not to cut through the skin. Then score again, making X-like cuts down the length of the cut side of the vegetables.

Step 5Spray or brush the oil onto the scored side of the vegetables.

Step 6Place 1/2 cup of cold tap water in a microwave-safe cup on the microwave-safe plate with the vegetables. Place them both in the microwave.

Step 7If your microwave has a "fresh vegetable" button, press it once, or press 3 1/2 minutes on full power. This will steam the vegetables. Repeat this with the other 2 halves of the cut vegetables to have 2 servings.

Step 8You can do all 4 halves together if they aren't too big for your microwave. Just use 3/4 cup of water and increase the time to 6 minutes.

Step 9After the vegetables are microwaved, the plate will be hot. Be careful touching the plate and the water cup. Pour out the water.

Step 10To serve, sprinkle the Mrs. Dash or similar seasoning onto the vegetables. It doesn't take much. Then drizzle a little of the Caesar dressing on them. Cut with a fork to eat.

Step 11We tried ranch dressing, but did not like it. Try whatever dressing you may like. We have this once or twice a week as a light meal. My son can only eat small meals every 2-3 hours, so this is perfect for us both. I think it comes in handy for any quick light meal or snack for anyone.
