I just love this simple, yet delicous recipe. It can be a meatless main dish over rice or as a side dish.

2 lb
fresh yellow squash
ripe tomatoes, diced or 2 cans diced tomatoes, undrained
1/3 c
olive oil
1 large
onion, diced
1 c
1/4-1 tsp
salt (if using fresh tomatoes use more, if using canned tomatoes use less)
1/2 tsp
1/2 tsp
1/2 tsp
cumin (optional)

How to Make Squash & Tomato Stew


  • 1Wash & cut squash into 1"-1 1/2" cubes.
  • 2Saute onion in olive oil until tender.
  • 3Add squash & saute for about 10 minutes.
  • 4Add tomatoes & water.
  • 5Add all seasonings.
  • 6Cook on medium for about 25 minutes or until tender.
  • 7This can be served over rice. Check out my recipe for Simple Arabic Rice.
