squash & tomato stew
I just love this simple, yet delicous recipe. It can be a meatless main dish over rice or as a side dish.

Ingredients
- 2 pounds fresh yellow squash
- 3 - ripe tomatoes, diced or 2 cans diced tomatoes, undrained
- 1/3 cup olive oil
- 1 large onion, diced
- 1 cup water
- 1/4-1 teaspoon salt (if using fresh tomatoes use more, if using canned tomatoes use less)
- 1/2 teaspoon pepper
- 1/2 teaspoon allspice
- 1/2 teaspoon cumin (optional)
How To Make squash & tomato stew

Step 1Wash & cut squash into 1"-1 1/2" cubes.

Step 2Saute onion in olive oil until tender.

Step 3Add squash & saute for about 10 minutes.

Step 4Add tomatoes & water.

Step 5Add all seasonings.

Step 6Cook on medium for about 25 minutes or until tender.
