squash & tomato stew

I just love this simple, yet delicous recipe. It can be a meatless main dish over rice or as a side dish.

Ingredients

  • 2 pounds fresh yellow squash
  • 3 - ripe tomatoes, diced or 2 cans diced tomatoes, undrained
  • 1/3 cup olive oil
  • 1 large onion, diced
  • 1 cup water
  • 1/4-1 teaspoon salt (if using fresh tomatoes use more, if using canned tomatoes use less)
  • 1/2 teaspoon pepper
  • 1/2 teaspoon allspice
  • 1/2 teaspoon cumin (optional)

How To Make squash & tomato stew

  • Step 1
    Wash & cut squash into 1"-1 1/2" cubes.
  • Step 2
    Saute onion in olive oil until tender.
  • Step 3
    Add squash & saute for about 10 minutes.
  • Step 4
    Add tomatoes & water.
  • Step 5
    Add all seasonings.
  • Step 6
    Cook on medium for about 25 minutes or until tender.
  • Step 7
