My husband is always pestering me to make fried summer squash with fried tomatoes. This morning I decided to try something different and it met with rave reviews from him.

    summer squash
  • 1
    jumbo egg or 2 regular
  • 1/2 + c
    rice flour or reg.
  • 1/2
    med onion

How to Make Squash Fritters


  1. In food processor with chop blade, place 1/2 summer squash in chunks and the onion. Pulse until finely chopped.
  2. In processor, switch to the mixing blade (or you can do this in a bowl) mix the chopped mixture with the egg and the flour. The consistency should be like thick pancake batter.
  3. Fry by serving spoon-full in olive oil. Turn until browned on both sides and cooked through. Makes 4 cakes.
    I served these with batter dipped fried tomatoes. You cold also add chopped green pepper and cheddar cheese to the cakes before frying.
