My husband is always pestering me to make fried summer squash with fried tomatoes. This morning I decided to try something different and it met with rave reviews from him.

Ingredients
- 1/2 - summer squash
- 1 - jumbo egg or 2 regular
- 1/2 + cup rice flour or reg.
- 1/2 - med onion
How To Make squash fritters

Step 1In food processor with chop blade, place 1/2 summer squash in chunks and the onion. Pulse until finely chopped.

Step 2In processor, switch to the mixing blade (or you can do this in a bowl) mix the chopped mixture with the egg and the flour. The consistency should be like thick pancake batter.

Step 3Fry by serving spoon-full in olive oil. Turn until browned on both sides and cooked through. Makes 4 cakes. I served these with batter dipped fried tomatoes. You cold also add chopped green pepper and cheddar cheese to the cakes before frying.
