- 1/2 + c

How to Make Squash Fritters
- 1In food processor with chop blade, place 1/2 summer squash in chunks and the onion. Pulse until finely chopped.
- 2In processor, switch to the mixing blade (or you can do this in a bowl) mix the chopped mixture with the egg and the flour. The consistency should be like thick pancake batter.
- 3Fry by serving spoon-full in olive oil. Turn until browned on both sides and cooked through. Makes 4 cakes.
I served these with batter dipped fried tomatoes. You cold also add chopped green pepper and cheddar cheese to the cakes before frying.
