I make this everytime we have something at church and there is never any left overs.

Ingredients

  • 2 pounds yellow squash or zucchini boiled
  • 1/2 cup butter, melted
  • 2 - eggs
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups ritz crackers
  • 1 cup onions, vidalia, peeled
  • 1/4 cup milk
  • 1 can cream of chicken soup
  • 1 1/2 cups sharp cheddar cheese

How To Make squash casserole

  • Step 1
    Boil the squash until tender and chop it up.
  • Step 2
    In a bowl combine the squash,butter,eggs,salt,pepper,ritz crackers,onion,milk, cream of chicken and cheese.
  • Step 3
    When all of the ingredients are added mix it up and pour into a greased 13x9 baking pan.
  • Step 4
    Bake at 350* for 45min to an hour
