squash casserole
This was one of my delicious sides for dinner last night. We just love squash of any kind in my house. This is an old recipe my Gram always made. Hope you like it.

Ingredients
- 2 pounds squash, sliced
- 2 - eggs
- medium - onion, chopped
- 6 tablespoons butter
- 1/2 - 3/4 cups milk
- 3 tablespoons brown sugar
- 1 1/2 teaspoons salt
- 1/2 teaspoon pepper
- - parsley ( optional )
- 2 cups shredded. cheddar cheese
- 40 - ritz crackers for layering and topping
- - butter for top
How To Make squash casserole

Step 1Preheat oven to 350 degree F. Cook squash in small amount of water till tender; drain, and mash. Saute onion in butter. In a small bowl beat eggs.

Step 2Add squash, eggs, milk, brown sugar, and salt, parsley, pepper to onions. Mix well. In a buttered 2 quart casserole put 1 layer of 10 crushed crackers, 1 layer of squash mixture, and 1 layer of cheese. Repeat the 3 layers; top with cracker crumbs and dots of butter.

Step 3Bake uncovered for 45 minutes... Enjoy!
