This is one of our families favorites. I make it year round but its especially good when the Yellow Squash is super fresh from the garden.

Ingredients
- 3 cups yellow squash - cooked
- 1 small onion - cooked with squash
- 1 - egg
- 8 ounces sour cream
- 1 can cream of chicken soup
- 1 stick margarine
- 1 box stuffing mix, chicken
How To Make squash casserole

Step 1Preheat oven to 350 and grease 8x8 pan with margarine.

Step 21. Chop and boil squash and onion together just till tender.

Step 3In large bowl, mix egg, sour cream and chicken soup together. Stir in cooked squash and onion.

Step 4In separate bowl, melt margarine and mix in the dry stuffing mix.

Step 5Alternate layers of squash mixture and dry stuffing mixture, starting with squash and ending with stuffing mixture for topping.

Step 6Bake 30-35 minutes. ~Enjoy!
