This is one of our families favorites. I make it year round but its especially good when the Yellow Squash is super fresh from the garden.

Ingredients

  • 3 cups yellow squash - cooked
  • 1 small onion - cooked with squash
  • 1 - egg
  • 8 ounces sour cream
  • 1 can cream of chicken soup
  • 1 stick margarine
  • 1 box stuffing mix, chicken

How To Make squash casserole

  • Step 1
    Preheat oven to 350 and grease 8x8 pan with margarine.
  • Step 2
    1. Chop and boil squash and onion together just till tender.
  • Step 3
    In large bowl, mix egg, sour cream and chicken soup together. Stir in cooked squash and onion.
  • Step 4
    In separate bowl, melt margarine and mix in the dry stuffing mix.
  • Step 5
    Alternate layers of squash mixture and dry stuffing mixture, starting with squash and ending with stuffing mixture for topping.
  • Step 6
    Bake 30-35 minutes. ~Enjoy!
