Every Summer as soon as squash is ready in the garden. All of the children and grandchildren start wanting to know when I am going to make squash casserole. This is their favorite.

Ingredients
- 2 cups cooked squash, drained
- 1 tablespoon minced onion
- - salt & pepper to taste
- 3 - eggs slightly beaten
- 1 cup shredded cheddar cheese
- 1 cup pepperidge farms stuffing mix
- 1 can cream of mushroom soup, undiluted
How To Make squash casserole

Step 1Cook and drain squash. Mix all of the above ingredients together in a bowl. Place in a greased (or spray with PAM) casserole dish. Top with an additional 1/2 cup each of stuffing mix and shredded cheese. Bake at 350 for 30-35 minutes or until firm.
