My cousin made this one time and I fell in love with it ever since. She never gave me the recipe but luckily I found it.

  • 1 large
  • 4 Tbsp
    butter (1/2 stick)
  • 3 c
    cooked squash, drained with all water squeezed out
  • 1 c
    crushed ritz crackers, plus additional for topping
  • 1/2 c
    sour cream
  • 1 tsp
    house seasoning
  • 1 c
    grated cheddar cheese

How to Make Squash Casserole


  1. Preheat oven to 350. Saute onion in butter for 5 minutes. Remove from pan and mix all ingredients together. Pour into buttered casserole dish and top with cracker crumbs. Bake for 25 to 30 minutes.
  2. Variation: For a different taste to this casserole, layer slices of cooked red potatoes in the bottom of the casserole dish, followed by squash mixture, repeat layers. Top with about 1 cup Ritz crumbs tossed with melted butter.
