My cousin made this one time and I fell in love with it ever since. She never gave me the recipe but luckily I found it.

Ingredients
- 1 large onion,chopped
- 4 tablespoons butter (1/2 stick)
- 3 cups cooked squash, drained with all water squeezed out
- 1 cup crushed ritz crackers, plus additional for topping
- 1/2 cup sour cream
- 1 teaspoon house seasoning
- 1 cup grated cheddar cheese
How To Make squash casserole

Step 1Preheat oven to 350. Saute onion in butter for 5 minutes. Remove from pan and mix all ingredients together. Pour into buttered casserole dish and top with cracker crumbs. Bake for 25 to 30 minutes.

Step 2Variation: For a different taste to this casserole, layer slices of cooked red potatoes in the bottom of the casserole dish, followed by squash mixture, repeat layers. Top with about 1 cup Ritz crumbs tossed with melted butter.
