When I get tired of the usual side dishes, I pull out this easy spinach souffle recipe. It is always well received and looks pretty.

Ingredients
- 6 - eggs, beaten
- 10 ounces box chopped frozen spinach, thawed
- 8 slices american cheese slices, torn into pieces
- 16 ounces cottage cheese, small curd
- 1 stick butter, melted
How To Make spinach souffle

Step 1Beat eggs together. Add all other ingredients. Pour into greased 9x13 pan. (I place in casserole dish) Cook at 350 for 40 minutes - 1 hour until light golden brown on top.
