How to Make Spinach Pockets


  1. Mix together spinach and ricotta.
  2. Roll out puff pastry until 1/4" - 1/2" thick.
  3. Cut pastry into 3"x4" rectangles.
  4. Spoon filling into the center of half of the rectangles.
  5. Egg wash the edges of the pastry.
  6. Top with puff rectangle. Press edges firmly. Egg wash tops.
  7. Place on baking sheet. Prick top with fork several times.
  8. Bake at 400 degrees for 20-25 minutes.
  9. Enjoy!
  10. * Can be frozen before baking, then bake additional 5 minutes from freezer.
