2 c
spinach, defrosted and well drained
1 c
ricotta
1
puff pastry sheet, thawed

EGG WASH

1
egg yolk
4 Tbsp
milk

How to Make Spinach Pockets

Step-by-Step

  • 1Mix together spinach and ricotta.
  • 2Roll out puff pastry until 1/4" - 1/2" thick.
  • 3Cut pastry into 3"x4" rectangles.
  • 4Spoon filling into the center of half of the rectangles.
  • 5Egg wash the edges of the pastry.
  • 6Top with puff rectangle. Press edges firmly. Egg wash tops.
  • 7Place on baking sheet. Prick top with fork several times.
  • 8Bake at 400 degrees for 20-25 minutes.
  • 9Enjoy!
  • 10* Can be frozen before baking, then bake additional 5 minutes from freezer.
