Ingredients

2 c
spinach, defrosted and well drained
1 c
ricotta
1
puff pastry sheet, thawed

EGG WASH

1
egg yolk
4 Tbsp
milk

Step-By-Step

1Mix together spinach and ricotta.
2Roll out puff pastry until 1/4" - 1/2" thick.
3Cut pastry into 3"x4" rectangles.
4Spoon filling into the center of half of the rectangles.
5Egg wash the edges of the pastry.
6Top with puff rectangle. Press edges firmly. Egg wash tops.
7Place on baking sheet. Prick top with fork several times.
8Bake at 400 degrees for 20-25 minutes.
9Enjoy!
10* Can be frozen before baking, then bake additional 5 minutes from freezer.
