How to Make Spinach Pockets
- Mix together spinach and ricotta.
- Roll out puff pastry until 1/4" - 1/2" thick.
- Cut pastry into 3"x4" rectangles.
- Spoon filling into the center of half of the rectangles.
- Egg wash the edges of the pastry.
- Top with puff rectangle. Press edges firmly. Egg wash tops.
- Place on baking sheet. Prick top with fork several times.
- Bake at 400 degrees for 20-25 minutes.
- * Can be frozen before baking, then bake additional 5 minutes from freezer.
