Ingredients

  • 2 cups spinach, defrosted and well drained
  • 1 cup ricotta
  • 1 - puff pastry sheet, thawed
  • EGG WASH
  • 1 - egg yolk
  • 4 tablespoons milk

How To Make spinach pockets

  • Step 1
    Mix together spinach and ricotta.
  • Step 2
    Roll out puff pastry until 1/4" - 1/2" thick.
  • Step 3
    Cut pastry into 3"x4" rectangles.
  • Step 4
    Spoon filling into the center of half of the rectangles.
  • Step 5
    Egg wash the edges of the pastry.
  • Step 6
    Top with puff rectangle. Press edges firmly. Egg wash tops.
  • Step 7
    Place on baking sheet. Prick top with fork several times.
  • Step 8
    Bake at 400 degrees for 20-25 minutes.
  • Step 9
    Enjoy!
  • Step 10
    * Can be frozen before baking, then bake additional 5 minutes from freezer.
