How to Make Spinach Pockets
- 1Mix together spinach and ricotta.
- 2Roll out puff pastry until 1/4" - 1/2" thick.
- 3Cut pastry into 3"x4" rectangles.
- 4Spoon filling into the center of half of the rectangles.
- 5Egg wash the edges of the pastry.
- 6Top with puff rectangle. Press edges firmly. Egg wash tops.
- 7Place on baking sheet. Prick top with fork several times.
- 8Bake at 400 degrees for 20-25 minutes.
- 10* Can be frozen before baking, then bake additional 5 minutes from freezer.
