Ingredients
- 2 cups spinach, defrosted and well drained
- 1 cup ricotta
- 1 - puff pastry sheet, thawed
- EGG WASH
- 1 - egg yolk
- 4 tablespoons milk
How To Make spinach pockets

Step 1Mix together spinach and ricotta.

Step 2Roll out puff pastry until 1/4" - 1/2" thick.

Step 3Cut pastry into 3"x4" rectangles.

Step 4Spoon filling into the center of half of the rectangles.

Step 5Egg wash the edges of the pastry.

Step 6Top with puff rectangle. Press edges firmly. Egg wash tops.

Step 7Place on baking sheet. Prick top with fork several times.

Step 8Bake at 400 degrees for 20-25 minutes.

Step 9Enjoy!

Step 10* Can be frozen before baking, then bake additional 5 minutes from freezer.
