Ingredients
- 2 tablespoons onion
- 1 pound fresh mushrooms
- 2 tablespoons butter
- 2 pounds fresh spinach..or 3 pks frozen
- 1 teaspoon salt
- 1/8 teaspoon pepper
- pinch pinch freshly grated nutmeg
- 8 ounces swiss cheese, grated..
- 3 - eggs
- 1 1/2 cups heavy cream, cold
- 2 - pastry shells
How To Make spinach pie

Step 1Bake Shells in 375 (OVEN) 5-10 minutes, until brown.In frying pan brown onion in butter. put mushrooms in and saute.Add spinach,salt and pepper,nutmeg, until tender...DRAIN excess water...In LARGE bowl, add 3 eggs scrambles, heavey cream,swiss cheese,(save a little cheese for TOP).to this mixture add the spinach mixture and mix well..Put in baked pie shells.top with left over swiss cheese.BAKE 375 25-30 MIN..makes 2 pie's...we enjoy it..and leftover's are great,if there r any Left..
