Substitutions used with success: * My picture indicates half the recipe in an 8 X 8 dish. * 2 boxes of frozen chopped spinach, thawed and drained. * Have used 1 - 1 1/2 sticks butter in spinach mix instead of 2. * Have used 1/2 stick butter for buttering phyllo leaves instead of 1. * Have used cooking spray in past instead of all butter when buttering phyllo leaves (not as good, but okay).

Popeye was on to something... Spinach can pack a pretty tasty punch! This spinach pie recipe may look fancy once it hits the table, but it's relatively easy to prepare. Full of flavor and with flaky layers, it's well worth the effort.

Ingredients

  • 2 pounds spinach, fresh, washed, drained and chopped
  • 2 sticks butter, melted
  • 4 - eggs
  • pinch parsley
  • 1 pound cheese (1/2 Feta & 1/2 cottage cheese)
  • pinch salt
  • - onion, minced for flavor
  • 1 teaspoon dill, dried
  • 1/2 pound Phyllo dough, thawed in refrigerator
  • 1 stick butter, melted for brushing on phyllo dough

How To Make spinach pie (spanakopita casserole)

  • Spinach, butter, eggs, parsley, cheese, onion, and dill in a bowl.
    Step 1
    Mix first 8 ingredients together.
  • Buttered phyllo leaves in a baking dish.
    Step 2
    Butter the bottom of a 9" X 13" baking pan. Place 4 phyllo leaves on the bottom, buttering after each leaf.
  • Half the spinach mixture on top of the phyllo dough.
    Step 3
    Place half of the spinach mix on phyllo leaves.
  • Remaining spinach mixture and phyllo dough layered in the baking dish.
    Step 4
    Then place 4 more leaves on top of the spinach, buttering after each leaf. Place the remainder of the spinach and place one more phyllo leaf on the very top. (For a thicker and flakier crust, add more phyllo leaves on top.) Sprinkle with butter. Turn phyllo at the edges towards the rim of the pan.
  • Baking the spinach pie.
    Step 5
    Bake in a moderately hot oven, 375 degrees, for 30 minutes or until golden brown.
