Ingredients

  • 6 pounds fresh spinach
  • 6 - egg whites
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 ounces heavy cream

How To Make spinach mousse

  • Step 1
    Blanch spinach for 30 seconds and drain thoroughly.
  • Step 2
    Put into a food processor with egg whites, nutmeg, salt and pepper.
  • Step 3
    Process for 1 minute.
  • Step 4
    Drizzle in cream while processing.
  • Step 5
    Chill.
