- 6 pounds fresh spinach
- 6 - egg whites
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 4 ounces heavy cream
How To Make spinach mousse

Step 1Blanch spinach for 30 seconds and drain thoroughly.

Step 2Put into a food processor with egg whites, nutmeg, salt and pepper.

Step 3Process for 1 minute.

Step 4Drizzle in cream while processing.
