This dish has graced my mother's, and then my, Christmas table since it first appeared in the Baton Rouge, Louisiana Junior League's first edition of River Roads Recipes cookbook back in the '50's or '60's. It has graced thousands of tables besides ours!! It is a Louisiana favorite. Hope you all enjoy it!

Ingredients
- 2 boxes frozen chopped spinach
- 2 tablespoons flour
- 1 medium onion, chopped
- 1/2 cup spinach liquid from cooked spinach
- 6 ounces jalapeno cheese
- 1/2 stick butter
- 1/2 cup evaporated milk
- 3/4 teaspoon garlic powder
- 1/4 teaspoon celery salt
- 1 tablespoon worcestershire sauce
- - salt and pepper to taste
- 1 dash tabasco sauce
- - bread crumbs
How To Make spinach madeline

Step 1Cook spinach and drain, reserving 1/2 cup liquid.

Step 2Melt butter, add onions and flour, stir until smooth.

Step 3Add milk, mix well. Add rest of seasonings, and 4 ounces of the cheese, cut into small pieces. Stir until cheese is melted.

Step 4Combine rest of ingredients, except bread crumbs and remaining cheese in a Pam sprayed cassserole dish. Top with bread crumbs and remaining cheese cut into tiny pieces.

Step 5Bake at 350 degrees for 20-25 minutes.
