This spinach recipe has a little 'bite' to it when you use pepper jack and cayenne - which I always do! If you like spinach, you should love this recipe. Either way, with a kick or mild, this recipe suits varied tastes.

Ingredients
- 4 tablespoons butter or margarine
- 3 - eggs
- 1 cup all purpose flour
- 1 cup milk
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 pound pepper jack or montery jack or cheddar - shredded - pre-shredded works just fine
- 20 ounces frozen spinach - chopped - defrosted - well drained
- 1/4 teaspoon cayenne - can be left out, depending on your taste
How To Make spinach cheese squares

Step 1Preheat oven to 350. In 9 x 13" pan, melt butter while preheating oven, then remove from oven. Squeeze excess water out of spinach with your hands.

Step 2In a large mixing bowl, beat eggs, add flour, milk, salt, baking powder & spinach. Mix well. (You can also do this in your food processor.)

Step 3Pour into baking pan and bake for 40 minutes. Cool 45 minutes to set. Cut into bite sized squares for appetizer. As a side dish, cut into 20 larger squares.

Step 4Just a tip: when done, the center of this dish is still shiny and wet looking. IT WILL SET as it cools.
