frozen chopped spinach, thawed and squeezed dry (10 oz each)
low-fat cottage cheese
grated reduced fat white cheddar cheese
How to Make Spinach-Cheese Casserole
1Coat a 2 quart baking dish with cooking spray. Preheat over to 350.
2In a large mixing bowl, beat eggs and flour until smooth. Add spinach, cottage cheese, cheddar, salt and pepper. Spoon into baking dish and smooth top.
3Bake, uncovered, for 1 hour, or until heated thorough.
4Cooks note: This dish can be made up to two days ahed of time and kept in the refrigerator.
