Ingredients
- 4 - eggs
- 2/3 cup flour
- 2 packages frozen chopped spinach, thawed and squeezed dry (10 oz each)
- 24 ounces low-fat cottage cheese
- 3 cups grated reduced fat white cheddar cheese
- 1 teaspoon salt
- 1/4 teaspoon pepper
How To Make spinach-cheese casserole

Step 1Coat a 2 quart baking dish with cooking spray. Preheat over to 350.

Step 2In a large mixing bowl, beat eggs and flour until smooth. Add spinach, cottage cheese, cheddar, salt and pepper. Spoon into baking dish and smooth top.

Step 3Bake, uncovered, for 1 hour, or until heated thorough.

Step 4Cooks note: This dish can be made up to two days ahed of time and kept in the refrigerator.
