Ingredients

  • 4 - eggs
  • 2/3 cup flour
  • 2 packages frozen chopped spinach, thawed and squeezed dry (10 oz each)
  • 24 ounces low-fat cottage cheese
  • 3 cups grated reduced fat white cheddar cheese
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

How To Make spinach-cheese casserole

  • Step 1
    Coat a 2 quart baking dish with cooking spray. Preheat over to 350.
  • Step 2
    In a large mixing bowl, beat eggs and flour until smooth. Add spinach, cottage cheese, cheddar, salt and pepper. Spoon into baking dish and smooth top.
  • Step 3
    Bake, uncovered, for 1 hour, or until heated thorough.
  • Step 4
    Cooks note: This dish can be made up to two days ahed of time and kept in the refrigerator.
