Ingredients

  • 4
    eggs
  • 2/3 c
    flour
  • 2 pkg
    frozen chopped spinach, thawed and squeezed dry (10 oz each)
  • 24 oz
    low-fat cottage cheese
  • 3 c
    grated reduced fat white cheddar cheese
  • 1 tsp
    salt
  • 1/4 tsp
    pepper

How to Make Spinach-Cheese Casserole

Step-by-Step

  1. Coat a 2 quart baking dish with cooking spray. Preheat over to 350.
  2. In a large mixing bowl, beat eggs and flour until smooth. Add spinach, cottage cheese, cheddar, salt and pepper. Spoon into baking dish and smooth top.
  3. Bake, uncovered, for 1 hour, or until heated thorough.
  4. Cooks note: This dish can be made up to two days ahed of time and kept in the refrigerator.
