12 ozfresh spinach
1 Tbspbacon grease
1 smallonion, finely chopped
1 tspgarlic, minced
smallhandful of corn meal
·salt & pepper to taste
·crisply cooked, crumbled bacon (optional)
How to Make Spinach-Bacon Sauté
- melt bacon grease in large skillet over medium high heat. Add onions and garlic, saute until onions are very soft.
- Add spinach to pan. Saute until wilted.
- Add egg and scramble with spinach. Sprinkling cornmeal until all is used up.
- When egg is cooked, remove from heat and stir in crumbled bacon if desired.
- Salt & pepper to taste.
