spinach-bacon sauté
This is how I usually make poke weed, but obviously poke isn't readily available year round, so had a whole bunch of spinach leftover this week that I didn't use, so I decided to cook it like this. It was so good!

Ingredients
- 12 ounces fresh spinach
- 1 tablespoon bacon grease
- 1 small onion, finely chopped
- 1 teaspoon garlic, minced
- 2 - eggs, beaten
- small handful of corn meal
- salt & pepper to taste
- crisply cooked, crumbled bacon (optional)
How To Make spinach-bacon sauté

Step 1melt bacon grease in large skillet over medium high heat. Add onions and garlic, saute until onions are very soft.

Step 2Add spinach to pan. Saute until wilted.

Step 3Add egg and scramble with spinach. Sprinkling cornmeal until all is used up.

Step 4When egg is cooked, remove from heat and stir in crumbled bacon if desired.

Step 5Salt & pepper to taste.
