spinach artichoke casserole
One of my favorite spinach recipes that I have to ask for at my mother's since my husband does not like artichokes. I have served this at parties as a dip as well and have added chopped water chestnuts. This recipe works fine with lower fat sour cream. And I love onions so I have been known to add a little more. Enjoy!!

Ingredients
- 1 stick butter, cold
- 2 - 10 oz pkgs of frozen chopped spinach
- 1 large can artichokes, drained and chopped
- 1 pint sour cream
- 1/2 cup onion, finely chopped
- 1/2 cup parmesan cheese
- - salt and pepper to taste
How To Make spinach artichoke casserole

Step 1Cook spinach according to box directions. Drain the spinach.

Step 2Saute the onions in the butter. Mix all ingredients together and place in an 8x8 casserole dish that has been sprayed w/Pam.

Step 3Sprinkle more parmesan cheese on the top, optional. Bake at 350* for 20-30 minutes.
