Ingredients
- 1 medium head cauliflower cut into small florets
- 2 tablespoons butter
- 1/4 cup sour cream
- 5 ounces fresh spinach cooked and drained with water squeezed out and chopped
- 1/2 cup feta cheese crumbled
- 2 - green onions chopped
- 2 tablespoons parsley
- 1 clove garlic minced
- - salt and pepper to taste
How To Make spinach and feta cauliflower mash

Step 1Boil or steam the cauliflower until soft. Puree the cauliflower with the butter, sour cream, feta, garlic and parsley in a food processor. Add a little milk if needed to make it a mashed consistency.

Step 2Stir in the spinach green onion and season with salt and pepper
