spicy mexican corn
I love corn......especially with Mexican dishes. I'm not able to find Mexicorn in my grocery stores anymore, so played around with a spicy version of my old favorite side that will work with my Mexican dishes.

Ingredients
- 2 cups frozen corn
- 1/2 green bell pepper, diced
- 1/2 red bell pepper, diced
- 1/4 red onion, finely diced
- 2 ounces diced green chiles, drained (1/2 can)
- 1/2 tablespoon butter
- 1 1/2 teaspoons chili powder
- 2 teaspoons cumin
- salt and pepper, to taste
- - cilantro, optional
How To Make spicy mexican corn

Step 1Combine all the ingredients in a medium saucepan.
