This is no ordinary spinach dish. When friends of ours from Gilbert, Arizona made this as a side dish last Thanksgiving, it was a huge hit. Needless to say there were no leftovers.

Ingredients

  • 6 bunch
    spinach, fresh
  • 3 medium
    sweet onions
  • 3-4 clove
    garlic
  • 6 Tbsp
    butter
  • 3 Tbsp
    olive oil
  • 3/4 c
    heavy cream
  • 3/4 tsp
    freshly ground nutmeg
  • 2 c
    pepper jack cheese
  • ·
    salt and pepper to taste

How to Make Spicy Creamed Spinach

Step-by-Step

  1. Chop and stem spinach, chop onions, mince garlic.
  2. Melt butter in large skillet over medium heat. Add olive oil, stir in onions and garlic. Cook about 2 minutes or until onions are translucent.
  3. Add spinach and stir till warmed throughout and is beginning to wilt.
  4. Add salt, pepper, nutmeg and cream. Bring to a boil then reduce heat and simmer till liquid is reduced by half.
  5. Add pepper jack cheese, stir till cheese is melted. Serve immediately.
