spicy creamed spinach

This is no ordinary spinach dish. When friends of ours from Gilbert, Arizona made this as a side dish last Thanksgiving, it was a huge hit. Needless to say there were no leftovers.

Ingredients
- 6 bunches spinach, fresh
- 3 medium sweet onions
- 3-4 cloves garlic
- 6 tablespoons butter
- 3 tablespoons olive oil
- 3/4 cup heavy cream
- 3/4 teaspoon freshly ground nutmeg
- 2 cups pepper jack cheese
- - salt and pepper to taste
How To Make spicy creamed spinach

Step 1Chop and stem spinach, chop onions, mince garlic.

Step 2Melt butter in large skillet over medium heat. Add olive oil, stir in onions and garlic. Cook about 2 minutes or until onions are translucent.

Step 3Add spinach and stir till warmed throughout and is beginning to wilt.

Step 4Add salt, pepper, nutmeg and cream. Bring to a boil then reduce heat and simmer till liquid is reduced by half.

Step 5Add pepper jack cheese, stir till cheese is melted. Serve immediately.
