Ingredients

·four large sweet potatoes, peeled and cut into 1 to 1 1/2 inch cubes

·12 tablespoons butter

·1 cup firmly packed dark brown sugar

·1 cup sugar

·three oranges, sliced and seeded

·1 cup water

·2 teaspoons pumpkin pie spice
How to Make spiced sweet potatoes
- in a large stock pot, place potatoes. Add water to cover. Bring to a boil over high heat. Reduce heat to simmer. Cook for 10 minutes or until just fork tender. Remove from stockpot, drain well.
- In stockpot, melt butter over medium heat. Add Brown sugar, sugar, sliced oranges, and water. Cook for 4 to 5 minutes or until sugar is dissolved, stirring often. Add pumpkin pie spice, stirring well.
- Return potatoes to stockpot. Cook for 10 to 15 minutes or until potatoes are soft. Makes 6 to 8 servings.
