Easy and great. Zucchini is the "crust" that even the kids will eat. I like that this recipe has room for some cooking creativity.

Ingredients

  • 2 medium
    zucchini, cut into 1/4 in. slices
  • 8 oz
    pizza sauce
  • 3 oz
    pkg sliced pepperoni
  • 1 c
    shredded mozzarella cheese
  • ·
    ripe olives (optional)
  • ·
    sliced jalapeno peppers (optional)

How to Make Speedy Pizza Rings

Step-by-Step

  1. On a large microwave-safe plate coated with non-stick cooking spray, arrange zucchini in a single layer. Microwave, uncovered, on high for 3 minutes.

    Spread 1 teaspoon pizza sauce on each zuchini round; top each with a slice of pepperoni.Heat uncovered for 2 minutes.

    Sprinkle each with cheese, jalapenos and olives. Microwave 40-60 seconds longer until cheese is melted.
