Ingredients

  • 1 package brown rice, quick-cooking Spanish-style, uncooked
  • 1 medium squash, fresh
  • 1 medium bell pepper, chopped
  • 1 pound stewed tomatoes

How To Make spanish squash casserole

  • Step 1
    Mix all ingredients in an oiled 9 x 13 baking dish; cover tightly with aluminum foil or tight fitting baking dish lid.
  • Step 2
    Bake for 30 minutes at 350 or until squash is tender.
  • Step 3
    NOTE: May substitute 4 fresh tomatoes for stewed tomatoes, if desired.
