    brown rice, quick-cooking Spanish-style, uncooked
  • 1 medium
    squash, fresh
  • 1 medium
    bell pepper, chopped
  • 1 lb
    stewed tomatoes

How to Make Spanish Squash Casserole

Step-by-Step

  1. Mix all ingredients in an oiled 9 x 13 baking dish; cover tightly with aluminum foil or tight fitting baking dish lid.
  2. Bake for 30 minutes at 350 or until squash is tender.
  3. NOTE: May substitute 4 fresh tomatoes for stewed tomatoes, if desired.
