Ingredients
- 3 tablespoons coconut oil, more if needed
- pink salt or sea salt, to taste
- 1 teaspoon ground cinnamon
- 1-2 teaspoon Ancho chili powder
- 2 tablespoons brown sugar
- 5 cups cubed sweet potatoes
- 1 poblano pepper, deseeded and diced
- 4 - 5 cloves garlic, minced
How To Make southwestern roasted poblano sweet potatoes

Step 1Melt the oil. Add the salt, spices, and brown sugar. Mix well.

Step 2In a large bowl, combine the sweet potatoes, poblano peppers, and minced garlic. Add the oil and spices to evenly coat the sweet potatoes.

Step 3Pour the potato mixture onto a baking sheet.

Step 4Bake 30-40 minutes or until the potatoes are tender and slightly browned.

Step 5Stir the potatoes halfway through the baking process.
