We love roasted poblano peppers in so many of our dishes, and they really complement the flavor of sweet potatoes.

Ingredients

  • 3 tablespoons coconut oil, more if needed
  • pink salt or sea salt, to taste
  • 1 teaspoon ground cinnamon
  • 1-2 teaspoon Ancho chili powder
  • 2 tablespoons brown sugar
  • 5 cups cubed sweet potatoes
  • 1 poblano pepper, deseeded and diced
  • 4 - 5 cloves garlic, minced

How To Make southwestern roasted poblano sweet potatoes

  • Step 1
    Melt the oil. Add the salt, spices, and brown sugar. Mix well.
  • Step 2
    In a large bowl, combine the sweet potatoes, poblano peppers, and minced garlic. Add the oil and spices to evenly coat the sweet potatoes.
  • Step 3
    Pour the potato mixture onto a baking sheet.
  • Step 4
    Bake 30-40 minutes or until the potatoes are tender and slightly browned.
  • Step 5
    Stir the potatoes halfway through the baking process.
