snow peas with crispy onions

I had some snow peas and herbs that needed to be used ASAP, and this is the tasty result that accompanied an Udon noodle dish. Use whatever fresh herbs you have on hand or in your garden. This is really good with mint. I use the crispy fried onions that come in a foil pouch, but you can make your own if you want. Make sure to prep your ingredients before starting to cook - It comes together very quickly!

Ingredients

  • 1/2 pound snow peas
  • 1 1/2 tablespoons grapeseed oil
  • salt
  • 3 cloves garlic, minced
  • 3 teaspoons good quality fish sauce (red boat is best)
  • 1 tablespoon fresh lime juice
  • 1 tablespoon basil, chopped (can use Thai basil)
  • 1 tablespoon cilantro, chopped
  • 1/4 cup crispy fried onions, for garnish

How To Make snow peas with crispy onions

  • Step 1
    Rinse the snow peas in a colander. Remove the strings from the peas. Set aside.
  • Step 2
    Heat the oil in a large frying pan until a drop of water sizzles when sprinkled on it. Add the snow peas and a pinch of salt. Cook, tossing frequently, just until the peas are bright green and barely tender. (It's ok for some to get a bit blistered, but don't let them brown or overcook.)
  • Step 3
    Add the garlic. Stir to disperse. Immediately add the fish sauce and stir until everything is coated. Remove from heat.
  • Step 4
    Add the lime juice and toss to combine. Adjust seasoning if necessary. Add half the herbs and toss again to combine. To serve, scoop onto plate and scatter the rest of the herbs over the peas. Sprinkle the crispy onions on top.
