I LOVE OKRA AND THIS IS A SIMPLE RECIPE

Ingredients

  • 1/2 - 16 oz. package frozen okra ,cut up
  • 8 ounces fresh mushrooms ,sliced
  • 1 - 14 oz.can diced tomatoes with juice
  • 1 - 6 oz. can tomato paste
  • 1 teaspoon file powder
  • 2 - bay leaves
  • 1 teaspoon salt
  • 1 teaspoon ground blk pepper
  • 2 tablespoons vegetable oil
  • 1 tablespoon vegetable oil
  • 2 tablespoons flour
  • 1 clove garlic, minced
  • 1 medium onion, finely chopped
  • 1 medium bell pepper, finely chopped
  • - cooked rice

How To Make smothered okra or (okra gumbo )

  • Step 1
    heat 1 t. oil in a large skillet over med heat, stir in garlic, bell pepper ,and onion, saute until tender.stir in okra, mushrooms,diced tomatoes with juice,tomato paste, file,salt & pepper and bay leaf. cook ,stirring occasionally,for 45 min.
  • Step 2
    heat 2 T.oil in a med skillet over med. heat ,stirring constantly,add flour, and cook 2 to 5 min. until golden roux has formed.
  • Step 3
    spoon roux into the okra mixture, and continue to cook, stirring occasionally for 5 to 10 until thickened. serve with rice
