This is a crowd pleasing refreshing take on boring old corn on the cob!

Ingredients

  • 4 - ears of fresh corn (still in husks)
  • 4 tablespoons butter, melted
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons mayonaise
  • 1/2 - fresh lime (squeezed)
  • 1/4 bunch chooped cilantro
  • 1/2 ounce your favorite fresh cheese (feta) crumbled

How To Make smokey sweet roasted corn

  • Step 1
    place fresh corn in cold water for 1 hour.
  • Step 2
    remove corn from water and place corn directly on the rack in 350 degree oven for 35 min.
  • Step 3
    In a bowl whisk together, melted butter, sugar, salt, pepper, mayonnaise, lime juice, and chilli powder. Set aside.
  • Step 4
    remove corn from oven and let slightly cool. Pull back husks and remove silks.
  • Step 5
    coat each ear of corn thoroughly in butter mixure. top the corn with fresh chopped cilantro and your favorite fresh cheese (feta) and ENJOY!!
