simple and delicious german red cabbage

My friend and I used to go to this little German restaurant that made the best red cabbage. I saw some in the grocery store and decided that I would attempt to make some just like the restaurant. I was amazed how much my dish tasted like the German restaurant's dish. My daughter told me last night that this was almost like eating dessert !!

Ingredients For simple and delicious german red cabbage

  • 1 md
    onion, chopped
  • 1 md
    apple, chopped
  • 1
    head of red cabbage, chopped into small pieces or shredded
  • 2 Tbsp
    bacon grease (gives you a reason to cook some bacon)
  • 2/3 c
    white vinegar
  • 2/3 c
    sugar
  • salt and pepper to taste

How To Make simple and delicious german red cabbage

    In a dutch oven, spray some vegetable spray to coat the bottom of pot. Add the bacon grease and warm on medium.

    Add the onions and apple cooking for about 5 minutes until the onions are very tender.

    Add the remaining ingredients, stirring well. Cover with a lid. Continue cooking and stirring the cabbage occasionally on medium heat for 1hr to 1 1/2 hours until the cabbage is nice and tender. Serve the cabbage while hot. You can also cook on low (simmer) for a few hours. If you cook it this way, remember to turn the heat up to medium and let it get hot enough to serve.

    NOTE: you can cut the sugar content for those watching their sugar intake. Simply keep a 1:1 ratio of sugar and vinegar. For example, do 1/3 cup of sugar and 1/3 cup of vinegar and add some water (approximately 2/3 cup) or 1/2 cup of sugar to 1/2 cup of vinegar and add about 1/4 cup of water.
