Ingredients

2 lb
yellow squash
1 pkg
andouille
1/4 lb
country ham pieces, chopped
1 medium
onion, chopped
3 medium
garlic cloves, minced
1 tsp
crushed red pepper
salt and pepper to taste

How to Make Simmered Summer Squash

Step-by-Step

  • 1Cut sausage on in small chunks
  • 2Cut squash 1/2 inch slices
  • 3In a large skillet, fry sausage and country ham until browned
  • 4Add onion, garlic, red pepper. Sautee for about 1 minute
  • 5Add squash. Cover and simmer for about 15 minutes. No peaking.
  • 6Uncover, add salt and pepper, mix gingerly and serve.
