Ingredients
- 2 pounds yellow squash
- 1 package andouille
- 1/4 pound country ham pieces, chopped
- 1 medium onion, chopped
- 3 medium garlic cloves, minced
- 1 teaspoon crushed red pepper
- - salt and pepper to taste
How To Make simmered summer squash

Step 1Cut sausage on in small chunks

Step 2Cut squash 1/2 inch slices

Step 3In a large skillet, fry sausage and country ham until browned

Step 4Add onion, garlic, red pepper. Sautee for about 1 minute

Step 5Add squash. Cover and simmer for about 15 minutes. No peaking.

Step 6Uncover, add salt and pepper, mix gingerly and serve.
