side essentials: spicy cubed potatoes and onions
I came up with this side for tonight’s dinner of grilled T-bone steaks. They are cubed golden potatoes, with a tangy/spicy sauce that stands up to something like a big T-bone. So yummy. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- 2 tablespoons water
- 2 tablespoons tamari sauce, or liquid aminos
- 2 tablespoons fresh clover honey
- 1 tablespoon olive oil, extra-virgin variety
- 1 medium leek, cut into rounds, the white part
- 10 ounces golden potatoes, peeled and cut into a 1/2-inch (1.5cm) dice
- 1/4 teaspoon chili powder, hot or mild, your choice
- 1/4 teaspoon white pepper, freshly ground
- 1 pinch hungarian paprika
- 1 clove garlic, minced

Step 1PREP/PREPARE

Step 2You can peel the potatoes, or leave them natural. In most cases, I like to leave the skins on.

Step 3Gather your Ingredients (mise en place).

Step 4Add the water tamari, honey, olive oil, leeks, and the potatoes in a saucepan, and then place over medium-high heat.

Step 5Cover, and let boil for about 4 – 5 minutes, or until the potatoes are almost cooked.

Step 6Add the remaining ingredients, and turn the heat down to low, low (just to keep them warm until serving).

Step 8I like serving these potatoes with beef; however, you could experiment with other proteins. Sometimes, I will make them, and just eat them all by themselves. Enjoy.
