Ingredients
- 1 pound peeled cooked shrimp 21-25 per lb.(tail cut)
- 1 stick celery finely chopped
- 1/4 cup basil finely chopped
- 10 - kalamata olives chopped
- 1 medium shallots minced
- 2 tablespoons mayonaise (reduced fat)
- 1 tablespoon white wine vinegar
- 1 pinch freshly ground pepper
- 4 large ripe tomato (cored)
- 1 tablespoon fresh dill chopped (for garnish)
- 1 tablespoon capers (for garnish
How To Make shrimp salad - stuffed tomatos

Step 1Combine shrimp, celery, basil, olives, shallot, mayonnaise, vinegar and pepper in a medium bowl. Stir to combine.

Step 2Carefully hollow out the inside of each tomato using a melon baller or small spoon; reserve the scooped tomato for another use. To serve, fill each tomato with a generous 1/2 cup of the shrimp salad. Then garnish with chopped dill and capers.
