Ingredients
- 1 large cauliflower head, shaved on a mandolin
- 1 small red onion, finely diced
- 1/2 cup white vinegar
- 1 cup golden raisins
- 1/2 cup capers, drained
- 1/4 cup olive oil, fruity flavored, I used a Meyer lemon one
- salt
- 1/4 cup grated Parmesan cheese
- 1/4 cup Italian parsley chopped
How To Make shaved cauliflower salad

Step 1Place the shaved cauliflower and red onion in a bowl.

Step 2In a food processor, add the vinegar, 1/4 cup of raisins, and the capers. Drizzle the olive oil in while processing the vinaigrette.

Step 3Add the remaining raisins to the cauliflower mixture and mix in the vinaigrette. Refrigerate for 2 hours.

Step 4Toss in the Parmesan cheese and top with parsley when ready to serve.
