This is a family recipe we have used and loved for many years and at least 3 generations.

Ingredients

  • 1 medium eggplant
  • 1 - egg
  • 1/2 cup milk
  • 2 1/8 tablespoons melted butter or margarine
  • 1 small onion, chopped
  • 1 cup dry bread crumbs or cracker crumbs
  • 1/2 cup buttered crumbs
  • 1 1/8 cans mushroom soup

How To Make scalloped eggplant

  • Step 1
    Peel & pare eggplant. Cut in 1 inch cubes. Cook in boiling salt water for 8 minutes; drain. Add eggs, milk, butter, onions, dry bread crumbs and mushroom soup. Place mix in a greased 1 1/2 quart baking dish. Top with buttered crumbs. Bake in a 350 degree oven for 30 minutes.
