Ingredients
- 1 medium eggplant
- 1 - egg
- 1/2 cup milk
- 2 1/8 tablespoons melted butter or margarine
- 1 small onion, chopped
- 1 cup dry bread crumbs or cracker crumbs
- 1/2 cup buttered crumbs
- 1 1/8 cans mushroom soup
How To Make scalloped eggplant

Step 1Peel & pare eggplant. Cut in 1 inch cubes. Cook in boiling salt water for 8 minutes; drain. Add eggs, milk, butter, onions, dry bread crumbs and mushroom soup. Place mix in a greased 1 1/2 quart baking dish. Top with buttered crumbs. Bake in a 350 degree oven for 30 minutes.
