This is an easy "down-home" recipe. Add a 4 oz. can of chopped green chiles for a touch of spice.

  • 1/4 c
  • 3 Tbsp
  • 2 tsp
    baking powder
  • 1 tsp
  • 6 large
    eggs, beaten
  • 2 1/3 c
    whipping cream
  • 1/4 c
    butter or margarine, melted
  • 6 c
    fresh corn kernels (can use frozen)

How to Make Scalloped Corn


  1. Combine first four ingredients.
  2. Whisk together eggs, whipping cream and melted butter. Gradually add the sugar/flour mixture, whisking until smooth. Stir in corn.
  3. Pour mixture into lightly greased 13x9 inch pan.
  4. Bake at 350 for 45 minutes until set. Let stand for 5 minutes.
