I can't remember where I got this recipe from. All I know is I'm glad I did!

  • 4 c
    fresh or forzen corn
  • 3
    eggs, beaten
  • 1 c
    butter milk (or reg milk)
  • 1 c
    crushed saltines (about 30 crackers)
  • 3 Tbsp
  • 1 Tbsp
  • 1 medium
    onion chopped
  • ·
    salt & pepper to taste

How to Make Scalloped Corn


  1. Combine all ingredients in a lg bowl only (3/4ths of the crackers.) Transfer to a greased 1 1/2 qt baking dish. Sprinkle with remaining cracker crumbs. Bake un-covered at 325 for an hour or until a knife inserted near the center comes out clean.
