I can't remember where I got this recipe from. All I know is I'm glad I did!

Ingredients

  • 4 cups fresh or forzen corn
  • 3 - eggs, beaten
  • 1 cup butter milk (or reg milk)
  • 1 cup crushed saltines (about 30 crackers)
  • 3 tablespoons butter
  • 1 tablespoon sugar
  • 1 medium onion chopped
  • - salt & pepper to taste

How To Make scalloped corn

  • Step 1
    Combine all ingredients in a lg bowl only (3/4ths of the crackers.) Transfer to a greased 1 1/2 qt baking dish. Sprinkle with remaining cracker crumbs. Bake un-covered at 325 for an hour or until a knife inserted near the center comes out clean.
