Have an abundance of zucchini you need to use up? Do you just LOVE zucchini the way I do? This is the recipe for you. If you've got one of those zucchini the got away from you and grew a foot over night then just grate it up and viola, you've got the most delicious tasting Zucchini squares you've ever had. I started making these one year when I just couldn't keep up with the over growth of zucchini in our garden. They are great hot, room temp or even cold. Eat them plain or top them with Marinara sauce. I bet the kids will eat these vegetables. Add any herbs you wish or change up the cheese.

***The number of pieces will depend on if you are serving this as an appetizer, side dish or main course. These are delicious on their own but can also be served with a side of marinara sauce.***
