my mother- in -law had a stroke, she lost her appetite for a little while and lost wgt. We grow our own garden every year, and i thought she would enjoy a squash casserole, i tried coming up with my own recipe and she loved it so much that i made her one a week for the last 6 months, she has regained her wgt. and swears by this casserole, she hasnt grown tired of it yet

Ingredients

5 small
yellow squash
1 small
onions, small white
1 box
stuffing mix, chicken or turkey flavored
1 c
cheddar cheese, shredded
2
eggs
1 Tbsp
butter
pinch
salt and pepper

How to Make savory squash caserole

Step-by-Step

  • 1cut squash and onion into small chunks,cover with water boil until well done,add butter,drain leaving a little liquid,put in mixing bowl
  • 2add well beaten eggs,stuffing mix,cheese, salt, pepper,pour mixture into,med lightly greased(i use pam) casserole bakingdish bake at 325 degrees for about35 mins or until golden brown
  • 3make sure you mash the squash after boiling,not to mushy
