- 1 tablespoon extra virgin olive oil (or more if needed)
- 1 medium onion, sliced, or cut into thin wedges
- 1 pinch sugar
- 1 medium zucchini (or yellow squash or both)
- 1 large tomato, chopped, optional
- 1 pinch red pepper flakes
- salt and freshly ground black pepper, to taste
How To Make sauteed zucchini and caramelized onions

Step 1In a large nonstick skillet, heat oil over medium-high heat. Add onion and cook, stirring, until transparent, about 5 minutes.

Step 2Sprinkle with sugar; cook until onions are browned and caramelized, about 7 minutes, adding a sprinkle of water as necessary to prevent burning and sticking.

Step 3Add zucchini to skillet. Saute until zucchini is tender, about 5 minutes.

Step 4Add tomato, if using, and red pepper flakes.

Step 5Cook until heated through and tomato begins to release its juice, about 3 minutes.
