Ingredients For sauteed zucchini and caramelized onions

  • 1 Tbsp
    extra virgin olive oil (or more if needed)
  • 1 md
    onion, sliced, or cut into thin wedges
  • 1 pinch
    sugar
  • 1 md
    zucchini (or yellow squash or both)
  • 1 lg
    tomato, chopped, optional
  • 1 pinch
    red pepper flakes
  • salt and freshly ground black pepper, to taste

How To Make sauteed zucchini and caramelized onions

    In a large nonstick skillet, heat oil over medium-high heat. Add onion and cook, stirring, until transparent, about 5 minutes.

    Sprinkle with sugar; cook until onions are browned and caramelized, about 7 minutes, adding a sprinkle of water as necessary to prevent burning and sticking.

    Add zucchini to skillet. Saute until zucchini is tender, about 5 minutes.

    Add tomato, if using, and red pepper flakes.

    Cook until heated through and tomato begins to release its juice, about 3 minutes.

    Add salt and pepper to taste.
