Ingredients

  • 3 - bell peppers (any color) – sliced
  • 3 - tomatoes – quartered
  • 5 cloves garlic – chopped
  • 1 - red onion - sliced
  • 1/2 cup italian parsley – chopped
  • 1 teaspoon capers – chopped - plus tablespoon of juice
  • 3-4 tablespoons olive oil
  • - spices – adjust to your liking:
  • 3/4 teaspoon salt
  • 1/4 teaspoon red pepper flakes
  • 3/4 teaspoon dried oregano
  • 1/4 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon curry powder
  • 1/2 teaspoon black pepper

How To Make sautéed peppers with tomatoes

  • Step 1
    Heat a large frying pan with 2 tablespoons of olive oil. Add the sliced peppers and onions and sauté until the onions are slightly golden. Add tomatoes, capers and spices and continue sauté until the tomatoes soften completely; this will take a few minutes, about 10 minutes or so. When the sauce has thickened add the chopped parsley, another clove of garlic chopped and a little drizzle of olive oil. Serve hot or cold.
