Enjoy this sauteed Italian zucchini as a summer side dish or even a light lunch. It reminds us of a low-carb pizza without a crust. A different way to use summer zucchini. The zucchini is cooked down with onions, garlic, and herbs for a delicious base. Tomato sauce adds more flavor, along with a hefty sprinkle of Parmesan cheese. Mozzarella cheese melts on top for a touch of decadence.

Ingredients

  • 1 tablespoon olive oil
  • 1 large zucchini, sliced very thin
  • 1 small onion, diced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon ground oregano
  • 2 cloves garlic, minced
  • 1 can tomato sauce (8 oz)
  • 1 teaspoon granulated sugar
  • 1/4 cup Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
