Ingredients
- 1 tablespoon olive oil
- 1 large zucchini, sliced very thin
- 1 small onion, diced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon ground oregano
- 2 cloves garlic, minced
- 1 can tomato sauce (8 oz)
- 1 teaspoon granulated sugar
- 1/4 cup Parmesan cheese
- 1/2 cup shredded mozzarella cheese
How To Make sauteed italian zucchini

Step 1Add olive oil to a saute pan. Once hot, saute thinly sliced zucchini and diced onion.

Step 2While cooking, season with salt, pepper, oregano, and minced garlic. You may use garlic powder if you prefer.

Step 3When the zucchini is soft, add tomato sauce, sugar, and Parmesan cheese. Stir together and simmer for approximately 10 minutes.

Step 4Add mozzarella on top. If you don't have shredded mozzarella handy, sliced will work too.
