Delicious and easy to make! For the Parmesan cheese, you can add more if you like, up to 1/2 cup.

Ingredients

  • 1 tablespoon olive oil
  • 1 large zucchini, sliced very thin
  • 1 small onion, diced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon ground oregano
  • 2 cloves garlic, minced
  • 1 can tomato sauce (8 oz)
  • 1 teaspoon granulated sugar
  • 1/4 cup Parmesan cheese
  • 1/2 cup shredded mozzarella cheese

How To Make sauteed italian zucchini

  • Step 1
    Add olive oil to a saute pan. Once hot, saute thinly sliced zucchini and diced onion.
  • Step 2
    While cooking, season with salt, pepper, oregano, and minced garlic. You may use garlic powder if you prefer.
  • Step 3
    When the zucchini is soft, add tomato sauce, sugar, and Parmesan cheese. Stir together and simmer for approximately 10 minutes.
  • Step 4
    Add mozzarella on top. If you don't have shredded mozzarella handy, sliced will work too.
