Sauteed Chayote with Garlic and Herbs
2 Tbspcoconut oil
2 largechayotes, peeled, haved core removed and thinly sliced
2 Tbspparsley, chopped, or 1 tbsp. dried
4 mediumcloves garlic chopped
·you can add other herbs if you wish to enhance the flavour.
3 smallscallions, chopped thin
1/4 smallyellow sweet bell pepper
·salt and pepper to taste
How to Make Sauteed Chayote with Garlic and Herbs
- Melt the coconut oil in a heavy pan/skilled over medium to high heat. Add the sliced chayote and saute for a moment,then add the garlic and saute. Make sure it doesn't burn.
- Saute the chayote until tender crisp, approximately 3 minutes. Stir in the sliced scallion.
- Transfer to a bowl and sprinkle with the parsley or other fresh herbs.
