sauerkraut salad-on a hot dog, mom's recipe

This is one of those salads that you might turn your nose up at, however, it is a great change and can be used to top a hot dog, or served with a corned-beef sandwich or as a side dish for other meals. I am posting it 1/03/12 as one of the groups I am participating in requires two ingredients which are in this recipe for a contest entry.

Ingredients

  • 2 cups drained sauerkraut, rinse and drain again.
  • 4 ounces (1/2 cup) jar of roasted red peppers(for sandwich contest) or pimento; chopped
  • 1 cup celery, sliced
  • 1 small onion, chopped
  • 2 large green peppers chopped
  • DRESSING:
  • 1/4 cup water
  • 1/2 cup oil
  • 2/3 cup vinegar, (red wine vinegar for sandwich contest) optional: white or apple cider vinegar is fine.
  • 1/4 cup sugar

How To Make sauerkraut salad-on a hot dog, mom's recipe

  • Step 1
    Drain sauerkraut and rinse under cold water, drain again.
  • Step 2
    Mix these dressing ingredients together until sugar is dissolved. Pour over the five vegetables listed and cover tightly. Refrigerate overnight. Drain before using.
  • Step 3
    Top a steamed or grilled hot dog with this salad and serve. It is great with a cornedbeef sandwich, and could be served with other meats as a side dish.
