sauerkraut salad-on a hot dog, mom's recipe
This is one of those salads that you might turn your nose up at, however, it is a great change and can be used to top a hot dog, or served with a corned-beef sandwich or as a side dish for other meals. I am posting it 1/03/12 as one of the groups I am participating in requires two ingredients which are in this recipe for a contest entry.

Ingredients
- 2 cups drained sauerkraut, rinse and drain again.
- 4 ounces (1/2 cup) jar of roasted red peppers(for sandwich contest) or pimento; chopped
- 1 cup celery, sliced
- 1 small onion, chopped
- 2 large green peppers chopped
- DRESSING:
- 1/4 cup water
- 1/2 cup oil
- 2/3 cup vinegar, (red wine vinegar for sandwich contest) optional: white or apple cider vinegar is fine.
- 1/4 cup sugar

Step 1Drain sauerkraut and rinse under cold water, drain again.

Step 2Mix these dressing ingredients together until sugar is dissolved. Pour over the five vegetables listed and cover tightly. Refrigerate overnight. Drain before using.

Step 3Top a steamed or grilled hot dog with this salad and serve. It is great with a cornedbeef sandwich, and could be served with other meats as a side dish.
