sauerkraut salad-on a hot dog, mom's recipe

This is one of those salads that you might turn your nose up at, however, it is a great change and can be used to top a hot dog, or served with a corned-beef sandwich or as a side dish for other meals. I am posting it 1/03/12 as one of the groups I am participating in requires two ingredients which are in this recipe for a contest entry.

Ingredients For sauerkraut salad-on a hot dog, mom's recipe

  • 2 c
    drained sauerkraut, rinse and drain again.
  • 4 oz
    (1/2 cup) jar of roasted red peppers(for sandwich contest) or pimento; chopped
  • 1 c
    celery, sliced
  • 1 sm
    onion, chopped
  • 2 lg
    green peppers chopped
  • 1/4 c
  • 1/2 c
  • 2/3 c
    vinegar, (red wine vinegar for sandwich contest) optional: white or apple cider vinegar is fine.

How To Make sauerkraut salad-on a hot dog, mom's recipe

    Drain sauerkraut and rinse under cold water, drain again.

    Mix these dressing ingredients together until sugar is dissolved. Pour over the five vegetables listed and cover tightly. Refrigerate overnight. Drain before using.

    Top a steamed or grilled hot dog with this salad and serve. It is great with a cornedbeef sandwich, and could be served with other meats as a side dish.
